IR thermometers measure only the surface temperature, not the internal temperature of food, liquids, or materials. To ensure accurate readings, stir milk before measuring.
Temperature readings can be momentarily affected by moisture, dust, or other particles in the air. Steam, even from non-boiling liquids, can condense on the thermometer and impact accuracy. IR thermometers do not measure through glass, liquids, or other transparent surfaces but rather the first point of contact.
Highly reflective surfaces, like stainless steel, can reflect ambient infrared energy, leading to inaccurate readings when measuring boiling water in polished containers.
